Unlike other styles of oven, there are no racks for holding pans in Deck Ovens. Rather Deck ovens bake or cook food placed directly in contact with a hot stone or metal deck. Deck ovens also utilize radiant heat, which is a process that utilizes infrared heat waves to penetrate into the food, heating it throughout. Compared to a traditional convection oven, a deck oven takes up a considerably larger amount of space and requires more skill to operate. However, due to their relatively simple design and few moving parts, they last a long time and operate without a lot of hassle.
