Unlike conventional stock pots where heat is applied directly to the bottom, Steam Jacketed Kettles are heated by injecting steam into a thin jacket that surrounds the bowl of the kettle. They are available in a variety of capacities ranging from 5 gallons to 100 gallons and come in two different styles: full jacket and 2/3rd jacket. Fully jacketed kettles are typically stationary. 2/3rd jacketed kettles come equipped with a spout and the ability to tile the contents out. Steam Jacketed Kettles are very versatile, able to cook sauces, pastas, puddings, stews, jams, jellies, soups, rice, eggs, and even chocolates because of the reduced risk of scorching.
