Unlike conventional stock pots where heat is applied directly to the bottom, Steam Jacketed Kettles are heated by injecting steam into a thin jacket that surrounds the bowl of the kettle. They are available in a variety of capacities ranging from 5 gallons to 100 gallons and come in two different styles: full jacket and 2/3rd jacket. Fully jacketed kettles are typically stationary. 2/3rd jacketed kettles come equipped with a spout and the ability to tile the contents out.
