Cook wearing red shirt removing tray of seafood from 4 tray steamer

Commercial steamers can be found in one of three styles: pressure (boiler-based), pressureless (convection) and connectionless. Depending on size and number of compartments, steamers can produce 200 to 800 meals per hour. There is a another type of compact, countertop steamer know as a portion or tortilla steamer designed to heat up small portions of food Ala Minute. Pressure Steamers cook food at 250°F degrees (water boils @ 212°F), allowing for faster cooking times, even with large batches. Though all Steamers make use of water, boiler-based steamers require diligent maintenance to avoid the build up of limescale inside the boiler. Build up of limescale will negatively impacts efficiency and performance of your Steamer.
