If there is a low-tech Jack of All Trades in a restaurant kitchen, it would be the Tilt Pan or Tilt Skillet. This piece of equipment can perform virtually any type of cooking except deep fat frying: braising, grilling, sauteing, pan frying, simmering, steaming, boiling, warming, and holding. Although 30- and 40-gallon sizes are the most popular, this equipment is available in 12- and 16-gallon sizes for countertops and 15-gallon floor models for operations with limited ventilation hood space. Most units measure 10 inches deep. The ability to tilt the pan either manually or electrically allows for easy removal of food to the serving pans without heavy lifting.
