Grey plastic dishrack with 6 dishes emerging from a commercial dishwasher

Commercial Dishwashers clean and sanitize large quantities of kitchenware in a short amount of time utilizing hot water, soap and rinse chemicals. They are available in a number of different styles: conveyor, door/rack, under-counter and ventless. Specialty glass and pot washers are also part of this category. Dishwashers can be either High Temperature or Low Temperature. With former, Dishwasher water temperature can range anywhere from 120°F to 180° depending on the model and which cleaning cycle they are running. Because they run at such high temperatures, chemical sanitizing agents are not required. Low Temperature Dishwashers wash and rinse at temperatures between 120°F and 140°F and require chemical sanitizing agents. The benefit is lower energy costs.
