It is intimidating to use at first. There are a ton of options and it seems daunting, but it only took a few short weeks to feel like I knew how to work it to its fullest capabilities, then after a year of use I realized that I had barely scratch the surface of what the oven could do. Overall I have complete confidence that my Rational will do the best job in finishing the products that I have spent hours to prepare.
What works

What doesn't
Maintenance (I know I can say that about almost every piece of equipment in a kitchen). It doesn't 'breakdown' often, but when it does it is a pain to get the repairs done in a timely manner. To be fair, we do deal with hard water in my kitchen and that seems to be the main problem as that tends to build up and then sluff off causing some internal clogging and impediments to the impeller. I have a hard time saying that is a "negative", it just seems to be something we deal with often enough for me to remember.
