This blast chiller / shock freezer combination quickly and efficiently cools your food through the temperature danger zone to protect… meats, fish, and produce from bacteria while also preserving consistency, moisture content, and nutritional properties. This unit can cool up to 221 lb. of food from 194 to 37 degrees Fahrenheit in 90 minutes or less, and it can freeze up to 221 lb. of food from 194 to 0 degrees Fahrenheit in 4 hours or less. Irinox blast chillers use a unique indirect air distribution system with specialized airflow patterns to ensure the cabinet has ideal temperature uniformity throughout while also preventing dehydration of product. This blast chiller / shock freezer features a cabinet that can accommodate (1) slim speed rack sized for 12" x 20" pans (sold separately). It boasts an intuitive touchscreen display to select between 43 product specific cycles including up to 20 customized cycles, while the MultiSensor 5-point probe relays accurate internal temperature readings. With the included HACCP control software, including WIFI data transfer and a USB data port, users can easily track, download, and transfer data. This unit is constructed of durable 304 stainless for long-lasting use. The Sanigen technology enhances sanitation with a 24/7 system that cleans every part of the chamber. A powerful 6 hp compressor circulates eco-friendly R-404A refrigerant in its remote, air-cooled condensing unit. A hardwired 208V, 3 phase electrical connection is required for operation.
