It can cool up to 44 lb. of food from 194 to 37.4 degrees Fahrenheit in just 110 minutes, and it can freeze up to 27 lb. of food from 194 to 37.4 degrees Fahrenheit in approximately 240 minutes (4 hours). A specialized ice cream cycle can be customized to harden ice cream for display while still maintaining softness for serving. This unit also has a time chill option, which cools contents based on a time limit, and a temperature chill option, which cools contents to a specified temperature. It is also capable of continuous shock freezing, so you can process large quantities of food without waiting to cycle the freezer. Use the thawing cycle to control the temperature of food to prepare it for the kitchen or grill.
